Oatmeal: Oatmeal Date Cookies

"These cookies are great because they please both camps of cookie lover: the soft and chewy type and the crispy type. For soft cookies, loosely cover cooled cookies with plastic wrap. For crip cookies, store in an airtight container."
List of Ingredients
1 C butter
1 C brown sugar, packed
1 C white sugar
1 tsp. salt
1 tsp. vanilla
2 eggs
1 1/2 C flour
3 C oatmeal
1 tsp. baking soda
1 C dates, pitted and chopped (kitchen scissors make quick work of this)
1/2 C chopped nuts (optional)
Recipe
Pre-heat oven to 375° F.
Combine dry ingredients, dates and nuts, set aside.
Cream sugar and butter, beat in eggs and vanilla. Mix in remaining ingredients until well combined. Form dough into 2 or 3 rolls, wrap and chill for at least an hour.
Cut rolls into slices and bake for 10-15 minutes.
YIELD: 2 Dozen
