List of Ingredients
1 cup raisins
1 cup water
3/4 cup shortening
1 1/2 cups white sugar
1 tsp vanilla
1 tsp baking soda
1 tsp salt
1/2 tsp baking powder
1 tsp cinnamon
1/2 tsp cloves
2 1/2 cups flour
2 cups oats
Recipe
Put the raisins and water in a small saucepan and bring to a boil. Simmer over medium-low heat for about 15 minutes. Meanwhile, continue with the rest of the recipe.
Mix the shortening, sugar, vanilla, baking soda, salt, baking powder, cinnamon, and cloves in a large bowl with a wooden spoon. Do not use an electric mixer as the cookies will not turn out the same.
Gradually add the flour and the oats. Drain the raisins, preserving the liquid. Add enough water to make 1/2 cup. Add the raisins and liquid to the bowl.
Stir by hand until well blended.
Bake in preheated oven of 350 degrees Fahrenheit for about 8 to 10 minutes. (Place about 2 inches apart on ungreased cookie sheet). Drop the cookies onto the baking sheet using fairly large tablespoons.
Take out of the oven when lightly browned. Allow to cool on the cookie sheet for about 1 minute before removing from the pan.
NOTE: The cookies can be frozen. They taste just as good once they are thawed.
YIELD: 40 Cookies
