    PB: Peanut Butter Oatmeal Cookies

    List of Ingredients

    1 cup creamy peanut butter
    1 cup butter or margarine, softened
    1 cup sugar
    1 cup lightly packed brown sugar
    2 eggs
    1 tsp. vanilla extract
    2 cups quick cooking rolled oats
    1-1/4 cups all-purpose flour
    1 tsp. baking soda


    Recipe

    Preheat oven to 350 degrees.

    Line 2 baking sheets with baking paper.

    In a large bowl, cream together peanut butter, butter/margarine, sugar, brown sugar, eggs and vanilla.

    In a small bowl, combine oats, flour and baking soda; stir into creamed mixture.

    Drop by tablespoonfuls onto prepared baking sheets; flatten slightly.

    Bake for 12 to 15 minutes, or until lightly browned. Let cool for a couple of minutes than slide the paper and cookies (together) onto a wire rack to cool completely.

    YIELD: 3 1/2 Dozen

    HINT: Fold up one end of the baking paper so it is easy to grasp when removing from pan

    If you are making these for children, lightly press a chocolate Teddy Grahams cookie in the centre before baking.
