    Source of Recipe

    List of Ingredients

    1 cup butter, softened
    2 cups sugar
    2 eggs
    2 cups flour
    1 1/2 tsp baking powder
    1/2 tsp baking soda
    1 tsp salt
2 cups Quaker Quick Cooking Oats
2 cups pecan halves -- divided

    Praline Icing:

    1/2 cup butter
    1 cup dark brown sugar
    1/4 cup milk
2 cups confectioners' sugar -- sifted

    Recipe

Preheat oven to 350 F. Grease cookie sheets with non-stick spray or line them with parchment paper. Set aside 45 pecan halves for garnish. Chop the remaining nuts for use in the cookies.

Cream 1 cup butter and sugar until fluffy. Add eggs and mix well. Add flour, baking powder, baking soda, and salt. Mix until just combined. Stir in oats and chopped pecans. Drop cookies by heaping tablespoons onto the prepared cookie sheet. Bake at 350 degrees until slightly brown around the edges, about 12 -14 minutes. Let cookies sit on cookie sheet for two minutes before transferring them to a wire rack to cool completely.

While cookies are cooling, make praline icing. Put ½ cup butter and the dark brown sugar in a medium saucepan and cook and stir over medium heat until mixture comes to a boil. Add milk and bring the mixture back to a boil. Remove from heat and add confectioners' sugar. Stir vigorously until the mixture is smooth. While it is still warm use it to top the cookies. Put a heaping tablespoonful of icing in the middle of each cookie and spread it around slightly with the back of the spoon, leaving a small border around the outside. If the frosting hardens up in the pan while you are working, place the pan over low heat and stir until softened. Place the reserved pecan halves on each of the cookies, and press down gently. When the cookies are cool and the icing has set, store them in an airtight container.

    YIELD: About 45 Cookies
