List of Ingredients
1 cup (2 sticks) butter, softened
1 cup granulated sugar
1 egg
1 teaspoon baking powder
1 teaspoon vanilla extract
¼ teaspoon salt
2 ¼ cups all-purpose flour
powdered egg whites (equal to 2 egg whites)
3 ¼ cups confectioners’ sugar, divided
1 teaspoon lemon juice
yellow and red food coloring
Recipe
In a large bowl, using a mixer set on high, beat butter and granulated sugar until light fluffy. Beat in egg, baking powder, vanilla, and salt. With mixer on low, beat in flour. Divide dough in half and wrap in waxed paper. Chill 30 minutes.
Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper. Roll dough to an 1/8” thickness. Using a coat template, cut out shapes. Place shapes on prepared baking sheets. Bake until cookies begin to brown, 8-10 minutes. Transfer baking sheets to wire racks; cool completely. Remove cookies from parchment paper.
In a large bowl, prepare powdered egg whites according to package directions. Add 3 cups confectioners’ sugar and lemon juice. Using a mixer set on high, beat until smooth. Remove 1/3 of icing; set aside. Using food coloring, tint remaining icing yellow. Spread yellow icing on top of cookies. Let icing set completely.
Add a few tablespoons remaining confectioners’ sugar to remaining white icing to thicken. Using food coloring, tint icing red. Place icing in a pastry bag fitted with a writing tip. Pipe red icing slicker details. Using the same template, decorate the coat cookies with different color icings for fancy dress coats.
