The Farmer's Wife's Pecan Cookies

1 + 1/4 cups flour, sifted
1/4 tsp. baking soda
1/8 tsp. salt
1 stick butter (no substitutions) cut in 1 inch pieces
1 and 1/4 cups light brown sugar (firmly packed)
1/2 tsp REAL vanilla

Sift flour, baking powder and salt into a large bowland set aside. Place butter pieces into a heavy 2-3 qt. sauce pan and melt slowly over low heat, stirring occasionally. Remove from heat and stir in sugar, vanilla and egg. Add sifted dry ingredients and stir until smoothe...add pecans and stir some more.
Place rounded tsp. of dough, 2 in. apart on foil lined cookie sheets. Place a pecan half on each cookie pressing gently. Bake in pre-heated 350 degree oven 12-14 minutes. The cookies will rise, then settle.
YIELD: About 36 cookies
