    Fruit: Apricot Almond Dessert

    Recipe Introduction

    This recipe was supplied by a cousin of the Philbrooks and has made a big hit. It's easy to prepare ahead and keep on hand in the freezer.

    List of Ingredients

    1-1/2 cups vanilla wafer crumbs
    1/3 cup melted butter

    2/3 cup toasted chopped almonds

    1 teaspoon pure vanilla extract

    1/2 gallon vanilla ice cream, softened

    1 10-ounce jar apricot jam


    Recipe

    Butter a 9 x 9-inch square pan.
    Combine the wafer crumbs, butter, almonds, and vanilla extract and mix well.
    Pat half the crumb mixture onto the bottom of the prepared pan. Reserve the remaining crumb mixture.
    Spread the ice cream over the crumbs. Freeze until firm.
    Quickly spread the jam over the firm ice cream and cover with the reserved crumb mixture. Cover and freeze. Remove from the freezer 20 minutes before serving. Cut into squares.

    YIELD: Serves 9
