    2½ cups flour

    2 cups plus 4 Tbsp sugar (divided use)

    1 tsp salt

    1 cup vegetable shortening

    1 egg

    ¼ cup cold water

    4 pounds fresh blackberries

    ¼ cup lemon juice

    ¾ cup orange juice

    ½ cup butter, plus 1 Tbsp melted butter (divided use)

    1 tsp ground cinnamon

    1 Tbsp instant ClearJel (available in the canning section of the grocery store)

    In a medium bowl, sift together the flour, 3 tablespoons sugar and salt. Work in the shortening with a pastry blender until mixture resembles coarse crumbs. In a small bowl, whisk together egg and cold water. Sprinkle over flour mixture and work with hands to form dough into a ball. Chill for 30 minutes.


    Preheat oven to 350° F.
    Roll out half of the dough to 1/8-inch thickness. Place in a 9- x 13-inch baking dish, covering the bottom and halfway up the sides. Bake for 20 minutes, until golden brown.


    In a large saucepan, mix blackberries, lemon and orange juices, and ½ cup of butter. Cook over medium-low heat until butter is melted.


    In a mixing bowl, stir together 2 cups of sugar, cinnamon and ClearJel; mix into blackberry mixture. Remove from heat and pour into baked crust.


    Roll remaining dough into a thickness of ¼-inch and cut into ½-inch-wide strips. Weave strips into a lattice pattern over blackberries, sprinkle with 1 tablespoon sugar and drizzle with 1 Tbsp butter. Bake for 35 to 40 minutes, until crust is golden brown.

    Makes 1 large cobbler
    (8 to 10 servings)




    Final Comments

    ClearJel is a cornstarch thickner that is sold in uncooked and cooked forms.
