    Crepes: Hot Fried Ice Cream Crepes

    Crepes:
    3/4 cup (100 g.) flour.
    1 tablespoon of sugar.
    Dash of salt.
    2 eggs.
    2 tablespoons butter.
    1 cup ( 250 ml.) milk.
    Vegetable oil for deep frying.

    Ice cream filling:

    1/4 gallon (1 kg.) vanilla ice cream.

    Recipe



    Sift flour into small bowl, add sugar, salt, eggs and half the milk. Mix until smooth. Add melted butter and remainder of the milk. Mix and let stand for 30 minutes.

    Grease heated pan lightly.

    Pour mixture 1/4 cup (60 ml.) at a time while making circular motion with the pan, spreading mixture thinly on the bottom of the pan.
    Fry slowly until set and lightly brown underneath.
    Brown other side.
    Repeat with remaining mixture.

    Ice cream filling - how to do:

    Divide ice cream to 6 cubes about 1 inch x 3 inches x 1 1/2 inch ( 2,5 cm. x 8 cm. x 4 cm.).
    Wrap ice cream cubes in cold crepes.
    Deep freeze for 2 days minimum.

    Frying:

    Heat vegetable oil in deep fryer until very hot.
    Take directly from freezer 1 -- maximum 2 portions of ice cream and immediately fry for 20 - 30 seconds.
    The crepe suppose to be warm and slightly crispy and ice cream still frozen.
    Serve immediately with favorite topping.

    6 Servings.
