    Flan: Marzipan and Pear Flan

    4 pears
    1-1/2 Cups (3 dl) white wine
    1/2 Cup 1 dl sugar
    1/2 pod vanilla

    3-1/2 oz (ca. 100 g) marzipan
    1/2 Cup 1 dl sugar
    3-1/2 oz (ca. 100 g) butter
    2 eggs
    2 Tbsp all purpose flour
    1 tsp ground cardamom
    1 tsp ground cinnamon
    1-1/2 oz (45 g) chopped almonds

    Peel pears, cut in half and remove cores. In a large saucepan, bring the white wine, sugar and the half vanilla pod to a boil. Place the pears in one layer in the wine syrup and simmer 5 minutes. Do not simmer longer or the pears will become soggy. Remove the pears with a slotted spoon and let them drain. When the pears are drained and cooled, cut them into smaller wedges. In a food processor mix the marzipan, sugar and butter until smooth and well blended. Scrape the sides so the dough will mix better. Add the eggs, one at a time, and mix; then add the flour, cardamom and cinnamon. Mix until smooth, but do not over mix. Remove the dough to a bowl and fold in the chopped almonds.

    In a pie pan or flan dish, place the pears in a circle in one layer. Spread the dough over the pears and bake in a preheated oven at 380 F (170 C) for 30 minutes. Cut the plums in half, remove the pits, then cut them into quarters. Cook them over low heat together with the sugar, and minced chili pepper until the plums are soft. Let the plums cool and serve a spoonful with a slice of warm Marzipan pear tart. Also nice with a tablespoon full of crème fraiche or whipped cream.
