Recipe Introduction
Even a brownie mix can go partying when dressed up with raisins and a top hat of ice cream, drizzled with spirited Cherry-Raisin Sauce.
List of Ingredients
1 package (1 lb 5-1/2 oz) fudge brownie mix
1 cup California raisins
Vanilla ice cream
Cherry-Raisin Sauce (below)
Recipe
Prepare brownie mix as package directs, mixing in raisins. Spoon batter into 12 well-greased, 2-3/4 inch muffin tin cups, dividing equally. Bake as directed, reducing baking time by 5 to 10 minutes. Loosen edges and remove warm brownies from pan; cool on racks. To serve, place brownies upside down in serving dishes. Top each with small scoop ice cream, then with warm Cherry-Raisin Sauce.
Makes 12 servings.
Cherry-Raisin Sauce:
In saucepan combine 2/3 cup sugar, 1/2 cup orange juice and 1-1/4 cups lemon juice; simmer 10 minutes. Stir in 1/4 cup butter or margarine, 1 package (12 ounces) frozen, pitted dark sweet cherries, 1 cup raisins and grated peel from 1 orange. Return to boil; simmer 5 minutes. Stir in 3 tablespoons each kirsch, rum and orange. Makes about 3 cups.
NOTE: Nine tablespoons rum can be substituted for the kirsch, rum and orange-flavored liqueur.
