1 pint ice cream, use a good quality and flavor of your choice
plastic wrap
1 - 2 fresh Mango, peeled
Mint for garnish

Fit a large piece of plastic wrap carefully inside each martini glass and drape it over the sides. Fill the glass with your favorite ice cream, pushing it to the bottom of the glass, making a cone shape; smooth off the top of the ice cream to make it level; cover with plastic and freeze solid. This can be made 1 to 2 days before serving. Place two serving plates in the freezer.
When ready to serve, cut approximately 3/8-inch slices from each side of the mango pit. Determine the best edge which will be used for the top of the mango rose then make a small cut straight across the bottom of each slice so that the slice will sit squarely on the plate around the ice cream.
Remove the ice cream from the freezer and pull out the ice cream from the martini glass using the plastic. Remove the plastic wrap and place the ice cream upside down on a frozen plate. Lay mango slices around the ice cream, staggering them, making it look like a rose. Garnish with mint and serve.
