    Fruit: Caramelized Strawberries w/ Baked Meringue

    1 cup sugar
    1/4 cup water
    2 tablespoons Grand Marnier
    2 tablespoons unsalted butter
    3 pints strawberries, rinsed, hulled, and halved
    4 egg whites
    1 cup brown sugar


    Recipe

    To prepare the strawberries: Combine the sugar and water in a 4-quart Dutch oven or large ovenproof sauté pan over high heat and cook, without stirring, until the sugar starts to brown, about 10 minutes. Swirl the pan to even the brown color. Add the strawberries and Grand Marnier and cook just until the strawberries are tender and the sugar has completely melted, about 5 minutes. Add the butter and stir until melted. Transfer to a Dutch oven or 2-quart soufflé dish and let cool.

    To prepare the meringue: Preheat the oven to 425°. In the bowl of a heavy-duty mixer, whip the egg whites at high speed until very foamy. Slowly add the brown sugar, about 1 tablespoon at a time, and continue whipping until the egg whites are very shiny and hold a stiff peak, about 5 minutes. Spread the meringue over the cooked strawberries. Bake until golden brown, 10 to 12 minutes.

    To serve, scoop the berries into bowls. Serve warm.
