Fruit: Grilled Banana Compote

2 large bananas, cut in half with the skin on
1 teaspoon vegetable oil
1 tablespoon unsalted butter
1/4 cup brown sugar
1/4 cup dark rum
splash grand marnier
1 teaspoon cinnamon
1/2 teaspoon dry ginger
orange zest for garnish
Recipe
Rub your cold grill with oil and heat. Brush bananas with vegetable oil and grill for 2-3 minutes. Remove from the grill and cut into medium size pieces. In a medium size saute pan heat butter until bubbling. Add brown sugar and allow to come to a boil. Add banana pieces and rum. Splash with grand marnier. Allow to boil for about 1 minute. Add in spices and remove from the heat. Serve warm over ice cream.
