    Fruit: Maple & Rum Bananas w/Walnuts & Vanilla Ice Cream

    List of Ingredients

    1/3 cup grade B maple syrup (see note)
    1/3 cup dark rum
    6 ripe bananas
    1/2 cup toasted chopped walnuts
    1 teaspoon fresh lemon juice
    1 teaspoon chopped lemon zest
    6 scoops vanilla ice cream


    Recipe

    In a large saute pan, simmer the rum and maple syrup over low heat for 2 minutes. Turn the heat up to high; add bananas, walnuts, lemon juice and lemon zest. Cook for another 2 minutes, or until the liquid is the consistency of light syrup.

    Spoon bananas and syrup over vanilla ice cream and serve immediately.

    Makes 6 servings.

    Note: You may substitute Grade A if Grade B is not available.
