    1 20-ounce can pumpkin
    1 9-ounce can crushed pineapple, undrained
    1/4 cup butter or margarine, softened
    1 egg, lightly beaten
    1 teaspoon ground cinnamon
    1 teaspoon ground nutmeg
    1 cup chopped dates
    1/4 cup firmly packed brown sugar
    2 tablespoons butter or margarine, melted
    1 cup miniature marshmallows

    Recipe



    Preheat oven to 350°F. Spray a 1-1/2 quart casserole with non-stick vegetable spray.

    In a large mixing bowl, combine pumpkin, butter, egg, cinnamon, nutmeg, and dates; blend thoroughly. Spoon into prepared casserole. Sprinkle with brown sugar, drizzle with melted butter and top with marshmallows.

    Bake for 30 minutes or until marshmallows are golden brown.

    Serves 6
