Fruit: Seared Apples w/Brandy-Vanilla Syrup

1 cup sugar
2 teaspoons cinnamon
1 teaspoon ginger
1 teaspoon nutmeg
1 teaspoon allspice
6 Granny Smith apples, peeled, cored, and halved
1 tablespoon vegetable oil
BRANDY-VANILLA SYRUP
1 cup water
1/4 cup brandy
1 vanilla bean, split in half lengthwise
3/4 cup sugar
1 cup creme fraiche, or 1 pint vanilla ice cream, as accompaniment
Recipe
To prepare the apples: Preheat the oven to 350 degrees. In a small bowl, combine the sugar, cinnamon, ginger, nutmeg, and allspice, and mix well. Dredge the apples in the sugar, turning them to coat well. Heat the oil in a large ovenproof saute pan over high heat until very hot. Place the apples in the pan, cut-side down, and sear well until the sugar caramelizes, 2 to 3 minutes. Place the apples in the oven and bake for about 35 minutes, or until tender.
To prepare the syrup: In a saucepan over high heat, combine the water, brandy, vanilla bean, and sugar. Bring the mixture to a boil and cook about 5 minutes, or until thick and the sugar has dissolved. Keep warm.
To serve: Place two apple halves on each plate, ladle about 1/4 cup of the warm syrup over the apples, and top with a dollop of creme fraiche or a scoop of vanilla ice cream. Serve warm.
