    Fruit: Fudgy Strawberry Whoopie Pies

    List of Ingredients

    1 15.5 oz box brownie mix
    1/4 cup all purpose flour
    1/2 cup butter, melted
    1 egg
    1 1/2 tsp vanilla, divided
    3 oz white chocolate
    1/4 cup whipping cream
    1/2 cup mascarpone cheese
    1/4 cup butter, softened
    4 1/4 cups powdered sugar, divided
    1 cup pureed strawberries

    Recipe

    Preheat oven 375 degrees. In a large bowl, stir together brownie mix with flour. Add butter, egg and 1 teaspoon vanilla. Stir until well combined.

    Allow to stand 10 minutes or until easy to work with. Shape dough into 1 inch balls. Place 2 inches apart on an ungreased baking sheet.

    Bake 9-12 minutes, or until set. Cool on baking sheet for 5 minutes, before moving to a cooling rack to cool completely.

    In a medium saucepan, melt white chocolate with whipping cream over medium heat. Once melted, set aside and cool about 10 minutes. Using an electric mixer, cream mascarpone cheese with butter in a large bowl. Mix until smooth, then add remaining vanilla. Gradually add 4 cups of powdered sugar.

    Beat in cooled white chocolate mixture. Cover with plastic wrap and place in fridge for 20 minutes, or firm enough to spread. Spread 1 tablespoon of strawberry mixture into one pie.

    Spoon 1/2 teaspoon of white chocolate and mascarpone mixture on top of filling. Top with another pie, bottom side down. Repeat with remaining pies.

    Using a sifter, sprinkle remaining powdered sugar over pies.
