Pudding: Apple-Cinnamon Bread Pudding

3 apples, peeled, quartered, cored and sliced
1/3 cup sugar mixed with
1 teaspoon ground cinnamon (reserve 1 teaspoonful)
3 tablespoons butter or margarine, melted
4 eggs
2 cups milk
1 teaspoon vanilla extract
9 slices cinnamon-raisin bread, cubed Recipe
Preheat oven to 350°F. Spray a 9-inch deep-dish pie plate with non-stick vegetable spray.
In a large bowl, combine apple slices with 2 tablespoons cinnamon-sugar mixture; toss to mix well.
In a large skillet, melt 1 tablespoon butter; add half the apples; cook, stirring often, for 2 minutes. Remove to a large plate. Repeat with another 1 tablespoon butter and remaining apples. Remove to the plate.
In a medium bowl, combine eggs, milk, vanilla, remaining cinnamon-sugar, and remaining melted butter; mix well.
Spread bread cubes in pie plate. Arrange apples in concentric circles on top of bread cubes. Pour egg mixture evenly over apples; sprinkle with reserved cinnamon-sugar mixture. Place in a large roasting pan; add hot water to come halfway up sides of pie plate.
Bake 40 to 45 minutes or until a knife inserted near the center comes out clean. Remove pie plate from water. Serve warm or cold.
