    2 bagels, 6 to 8 ounces each, preferably a day old (as a guide, frozen Sara Lee bagels are about 2 3/4 ounces each)
    1 1/4 cups milk
    3/4 cup heavy cream
    1 cup canned pumpkin
    3 large eggs
    1/2 cup sugar
    1/2 cup packed light brown sugar
    4 tablespoons unsalted butter, melted
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1/4 teaspoon salt
    1/2 cup raisins
    1 apple, peeled, cored and diced
    1/2 cup pecans, chopped

    Apple-Pumpkin Bread Pudding

    2 bagels, 6 to 8 ounces each, preferably a day old (as a guide, frozen Sara Lee bagels are about 2 3/4 ounces each)
    1 1/4 cups milk
    3/4 cup heavy cream
    1 cup canned pumpkin
    3 large eggs
    1/2 cup sugar
    1/2 cup packed light brown sugar
    4 tablespoons unsalted butter, melted
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1/4 teaspoon salt
    1/2 cup raisins
    1 apple, peeled, cored and diced
    1/2 cup pecans, chopped

    Heat oven to 350 degrees. Butter a 2-quart glass baking dish. Cut 1 bagel into chunks and process it in a food processor to make fine crumbs. Cut the other bagel into small pieces. Combine the bagels in a large bowl.

    Heat milk and cream in a saucepan over medium-high heat just until small bubbles start to rise. Pour the mixture over the bagels; set aside.

    Whisk together pumpkin, eggs, sugars, butter, cinnamon, nutmeg and salt. Stir this mixture into the milk-bagel mixture. Pour it all into the prepared baking dish. Sprinkle with raisins, then stir lightly to push raisins down into the pudding. (They could burn if too exposed.) Sprinkle with diced apple and pecans.

    Bake 40 to 50 minutes, until pudding is set and pecans are toasty brown. Serve warm.

    Makes 8 servings.

    Approximate values per serving: 487 calories, 21 g fat, 120 mg cholesterol, 10 g protein, 68 g carbohydrates, 3 g fiber, 388 mg sodium, 37 percent calories from fat.
