    2 tablespoons lemon juice
    2 cups grated apple
    1-1/2 cups milk
    1 egg
    1/2 cup maple syrup
    1 teaspoon ground cinnamon
    1/2 teaspoons vanilla extract
    4 cups cubed whole grain bread
    1/3 cup raisins
    Cinnamon sugar

    Preheat oven to 350°F. Spray an 8x8-inch baking pan with non-stick vegetable spray.

    In a medium bowl, sprinkle lemon juice over apples; toss gently to mix. In another medium bowl, combine milk, egg, maple syrup, cinnamon, and vanilla; whisk to blend well.

    Spread one-third bread cubes in bottom of prepared baking pan; cover with 1 cup apples and half the raisins. Pour 1 cup milk mixture over the top. Repeat layers, ending with a layer of bread cubes. Pour remaining milk mixture over the top. Sprinkle with cinnamon sugar. Cover; let stand for 5 minutes.

    Bake for 45 minutes or until set. Let stand for 10 minutes before serving.
