    Pudding: Bread Pudding w/Meringue Topping

    List of Ingredients

    4 slices bread, cubed
    3-1/2 cups milk
    4 eggs, separated
    1 tablespoon vanilla extract
    1/8 teaspoon salt
    1/4 cup butter or margarine, cut in small pieces
    1/2 cup raisins
    1/2 cup sugar

    Recipe

    Preheat oven to 300°F. Spray a 1-1/2 quart casserole with non-stick vegetable spray.


    Arrange bread cubes in prepared casserole. Pour 1/2 cup milk over bread cubes.

    In a large mixing bowl, beat sugar and eggs yolk until foamy. Add remaining milk, stirring until blended. Stir in vanilla and salt. Pour over bread cubes. Fold in raisins.

    Place casserole in a roasting pan; pour hot water into roasting pan to a depth of 1-inch.

    Bake 40 to 50 minutes or until a knife inserted near the center comes out clean.

    Increase oven temperature to 350°F.

    In a medium bowl, beat egg whites until foamy. Gradually add sugar; beating until stiff peaks form. Spread over the top of the pudding.

    Bake for 15 minutes or until golden brown.

    Serves 8
