    Pudding: Caramel Pudding II

    List of Ingredients

    1 20-ounce can pumpkin
    1 cup firmly packed brown sugar
    2 teaspoons ground cinnamon
    1 teaspoon nutmeg
    1/2 cup molasses
    1/2 cup corn syrup
    1/2 cup butter or margarine

    Recipe

    Preheat oven to 350°F. Spray a 2-quart casserole with non-stick vegetable spray.

    In a medium bowl, combine pumpkin, sugar, and spices; blend thoroughly. Place in prepared casserole.

    In a heavy saucepan, combine molasses, syrup, and butter; bring to a boil over medium heat, stirring constantly. Pour over the pumpkin mixture.

    Bake 20 to 30 minutes or until top begins to caramelize.

    Serve warm topped with whipped cream, if desired.
