Pudding: Cherry French Bread Pudding

2 cups low-fat milk
2 tablespoons butter or margarine
3 eggs
1/3 cup sugar
1 teaspoon cornstarch
1 teaspoon vanilla
1/4 teaspoon salt
4 cups day-old french bread, cut in 1/4-inch cubes
3 cups pitted fresh sweet cherries
Cinnamon Sugar
1 cup low-fat vanilla yogurt (optional)
Cinnamon Sugar:
2 teaspoons sugar
Generous dash ground cinnamon
Recipe
Mix sugar and cinnamon, using as directed. Makes about 2 teaspoons.
Heat milk and butter but do not boil; remove from heat and set aside. Beat eggs, sugar, cornstarch, vanilla and salt together. Gradually stir milk mixture into egg mixture; pour over bread cubes and let stand 30 minutes.
Spread cherries over bottom of buttered 9-inch square pan. Pour bread mixture over cherries. Sprinkle with Cinnamon Sugar.
Bake at 350 degrees for 30 to 40 minutes or until thin blade inserted near center comes out clean. Cool slightly. Serve with frozen yogurt, if desired.
Makes 8 servings.
