Pudding: Chocolate Bread Pudding

2 cubs stale bread cubes
4 cups scalded milk
2 squares baking chocolate, melted
2/3 cup sugar
2 eggs
1/4 tsp. salt
1 teaspoon vanilla extract
Soak bread in milk 30 minutes. Melt chocolate in saucepan over hot water. Add one-half sugar and enough milk take from bread to make of consistency to pour. Add to bread mixture with remaining sugar, salt, vanilla and beaten eggs. Turn into buttered pudding dish. Bake in a moderate oven (325) for 1 hour. Serve with Cream Sauce I, or Brandy Sauce (recipe follows)
BRANDY SAUCE
1/4 cup butter
1 cup powdered sugar
2 Tbsp. brandy
Yolks 2 eggs, beaten
Whites 2 eggs, beaten
1/2 cup milk or cream
Cream the butter, add sugar gradually, then brandy slowly, well beaten yolks, and milk or cream. Cook over hot water until it thickens as a custard. Pour hot custard on to beaten egg whites. Spoon over servings of pudding or shortcakes.
CREAM SAUCE I
3/4 cup thick cream (cold)
1/4 cup whole milk (cold)
1/3 cup powdered sugar
1/2 tsp. vanilla extract
Beat cream and milk until stiff with egg beater. Add sugar and vanilla.
