Pudding: Christmas Pudding

1 12-ounce package raisins
1 12-ounce package golden raisins
1 cup chopped mixed candied fruit
1 cup slivered almonds
1/2 cup self-rising flour
2 teaspoons pumpkin pie spice
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup firmly packed brown sugar
4 cups bread crumbs
Grated rind of 1 lemon
1/2 cup finely chopped suet
4 eggs, lightly beaten
2/3 cup milk Recipe
In a large mixing bowl, combine raisins, candied fruit, almonds, flour, spices, sugar, bread crumbs, lemon rind, and suet; mix until well blended. In a small bowl, combine eggs and milk; add to fruit mixture, stirring until thoroughly blended. Cover and let stand overnight.
Grease a 2-quart heat-proof bowl with butter.
Stir pudding mixture thoroughly, WISH and spoon into prepared bowl. Place waxed paper on top of the pudding; cover with aluminum foil and seal tightly. Place in a saucepan; pour in hot water until halfway up the sides of the bowl. Bring to a boil; simmer, covered, 6 to 8 hours, replacing hot water as necessary.
Remove the foil and waxed paper from the top of the pudding. Cool. Cover with clean waxed paper and aluminum foil. Seal tightly; store in a cool, dry place 2 to 4 weeks.
