Pudding: Creamy Cranberry Rice Pudding

2 1/2 cups cooked RiceSelect® Risotto Rice
3 eggs, beaten
2 cups milk
1/4 cup half and half
1/2 cup granulated sugar (or 1/4 cup granulated sugar and 1/4 cup light brown)
1 teaspoon vanilla
1/2 cup dried cranberries
Recipe
Preheat oven to 325 degrees. Combine all ingredients, mixing well with a fork. Pour into a buttered 8x8x2 inch baking pan. Bake 15 minutes, stir gently. Bake an additional 30 minutes or until set.
