Pudding: Hot Rhubarb Pudding

4 eggs, lightly beaten
2 cups sugar
2 teaspoons vanilla extract
1/2 cup all-purpose flour
8 cups chopped rhubarb
Whipped cream
Recipe
Preheat oven to 350°F. Spray a 13x9-inch baking pan with non-stick vegetable spray.
In a large bowl, combine eggs, sugar, vanilla, and flour; beat until well blended. Stir in rhubarb. Pour into prepared baking pan.
Bake for 40 minutes or until pudding is firm. Serve warm topped with whipped cream.
