    1/4 cup butter or margarine, softened
    1/2 cup sugar
    1 teaspoon grated lemon rind
    2 eggs, separated
    3 tablespoons lemon juice
    2 tablespoons all-purpose flour
    1/2 cup chopped nuts
    1 cup milk
    Whipped cream
    Chopped nuts

    Preheat oven to 325°F. Place paper liners in 6 muffin cups

    In a medium bowl, cream butter, sugar, and lemon rind until light and fluffy. Beat in egg yolks. Blend in lemon juice, flour, nuts, and milk. In a medium bowl, beat egg whites until stiff. Fold into creamed mixture. Pour into prepared muffin cups; place in a pan of hot water.

    Bake for 40 minutes or until top springs back when lightly touched.

    Serve topped with whipped cream and nuts.

    Serves 6
