    Pudding: Pineapple Bread Pudding

    3 eggs, beaten
    1/2 cup butter
    1 cup white sugar
    1 (20oz) can crushed pineapple with juice
    1/2 cup milk
    11 to 12 slices of sandwich bread
    1/4 teaspoon vanilla extract

    Recipe



    Preheat oven to 375 degrees F (190 degrees C). In a mixing bowl, cream together butter and sugar. Add eggs, milk, pineapple and juice, bread cubes, and vanilla. Mix together and bake in a 2 quart casserole dish or oblong glass baking dish for 40 to 45 minutes.

    Great served warm with a small scoop of vanilla ice cream over top or a nice lemon sauce!
