Pudding: Vieneese Pudding

6 tablespoons sugar
3 tablespoons water
2-1/2 cups milk
4 thick slices bread, diced
3 eggs, lightly beaten
1 cup chopped candied fruit
1 cup chopped nuts
2 tablespoons dry sherry
Recipe
In a heavy saucepan, combine sugar and water; stir until sugar is dissolved. Boil steadily until mixture is dark brown. Cool slightly. Add milk and heat, WITHOUT BOILING, until milk has absorbed the caramel.
Place diced bread in a large bowl; pour milk mixture over the top. Let stand for 30 minutes.
Grease a 2-quart heat-proof bowl with butter.
Add eggs, candied fruit, nuts, and sherry to bread mixture. Stir until well combined. Pour into prepared bowl; cover tightly with aluminum foil.
Place in a saucepan; pour in hot water until halfway up the sides of the bowl. Simmer, covered, for 2-1/2 hours. Cool for 5 minutes. Turn out of the bowl onto a serving plate. Top with whipped cream, if desired.
