    Sherbet: Cranberry Sherbet

    List of Ingredients

    1 12-oz. can (1 1/2 cups)
    evaporated milk
    1 12-oz. can frozen cranberry
    juice cocktail concentrate,
    thawed
    1 tsp. finely shredded orange
    peel
    Cranberries (optional)
    Variegated mint leaves
    (optional)


    Recipe

    Stir together milk, cranberry juice cocktail concentrate, and orange peel. Pour into a 2-quart square baking dish. Cover and freeze for 2 to 4 hours or till mixture is almost firm. Break into small chunks.

    Transfer chunks to a chilled mixing bowl. Beat with an electric mixer on medium speed till smooth but not melted. Return to pan. Cover and freeze till firm. Scoop into dessert dishes and garnish with cranberries and mint leaves, if desired.

    YIELD: 6 to 8 Servings
