    Fruit: Sherried Cream with Fruit

    List of Ingredients

    1 pint fresh strawberries
    1/4 cup sugar
    1/3 cup sugar
    2 tablespoons cornstarch
    1/8 teaspoon salt
    2 cups milk
    1/4 cup cream sherry or fruit juice
    2 egg yolks, beaten
    2 tablespoons butter
    1 teaspoon vanilla

    Recipe

    About 4 hours (or more) before preparing, wash and slice strawberries. Cover with 1/4 cup sugar and chill.
    In a double boiler or saucepan mix 1/3 cup sugar, cornstarch and salt. Add milk and sherry and cook over medium heat. Stir until boiling.
    Boil for one minute and remove from heat. Blend part of hot pudding into egg yolks to temper them, then blend into mixture in pan. Cook for about 30 seconds. Remove from heat.
    Stir in butter and vanilla until butter is melted.
    Layer spoonfuls of pudding and fruit in glass pudding dishes.Chill well before serving.

    YIELD: 4 Servings

    Note: In place of strawberries, any fresh fruit may be used.
