    Torte: Chocolate Mint Torte

    1/2 cup semisweet chocolate morsels
    3/4 cup boiling water
    3/4 cup butter or margarine, softened
    1-3/4 cups firmly packed brown sugar
    2 tablespoons sugar
    3 eggs, beaten
    1-1/2 teaspoons vanilla extract
    2-1/4 cups self-rising flour
    3/4 cup buttermilk
    Mint Frosting (below)

    In a small saucepan, add chocolate morsels to boiling water; cook over low heat, stirring constantly, until melted. Cool.

    Preheat oven to 350�F. Spray 3 8-inch cake pans with non-stick vegetable spray.

    In a large mixing bowl, cream butter and sugars until light and fluffy; beat in eggs and vanilla. Add flour alternately with buttermilk, beating well after each addition. Pour into prepared cake pans.

    Bake 25 to 30 minutes or until a tester inserted in the center comes out clean. Cool in pans for 10 minutes. Remove from pans; cool completely on a wire rack.

    MINT FROSTING

    1/2 cup crushed peppermint candy
    1 cup milk
    2 pounds confectioners� sugar

    In a small saucepan, combine candy and milk. Over low heat, stirring constantly, cook until candy melts. Add confectioners� sugar, beating until thick and smooth. Spread frosting between layers and on top and sides of cake.

    YIELD: 8 Servings
