Torte: Chocolate Mint Torte

1/2 cup semisweet chocolate morsels
3/4 cup boiling water
3/4 cup butter or margarine, softened
1-3/4 cups firmly packed brown sugar
2 tablespoons sugar
3 eggs, beaten
1-1/2 teaspoons vanilla extract
2-1/4 cups self-rising flour
3/4 cup buttermilk
Mint Frosting (below) Recipe
In a small saucepan, add chocolate morsels to boiling water; cook over low heat, stirring constantly, until melted. Cool.
Preheat oven to 350°F. Spray 3 8-inch cake pans with non-stick vegetable spray.
In a large mixing bowl, cream butter and sugars until light and fluffy; beat in eggs and vanilla. Add flour alternately with buttermilk, beating well after each addition. Pour into prepared cake pans.
Bake 25 to 30 minutes or until a tester inserted in the center comes out clean. Cool in pans for 10 minutes. Remove from pans; cool completely on a wire rack.
MINT FROSTING
1/2 cup crushed peppermint candy
1 cup milk
2 pounds confectioners’ sugar
In a small saucepan, combine candy and milk. Over low heat, stirring constantly, cook until candy melts. Add confectioners’ sugar, beating until thick and smooth. Spread frosting between layers and on top and sides of cake.
