    Fruit: Warm Apple Spring Rolls w/ Caramel Dipping Sauce

    List of Ingredients

    For the spring roll:

    2 Granny Smith apples peeled, seeded and sliced

    2 Red Delicious apples peeled, seeded and sliced

    1 stick butter

    3 tablespoons light brown sugar

    1/2 vanilla bean, split

    1/2 cup chopped walnuts

    1/2 cup raisins

    1/8 teaspoon nutmeg

    pinch salt

    1 tablespoon spiced rum

    8 spring roll wrappers


    Recipe

    Combine all ingredients except wrappers and sauté over medium heat until apples are tender and sugar has melted, about 10 minutes.

    Cool filling and remove vanilla bean husk. Add filling to spring roll wrappers, roll and seal with egg wash. Sauté in vegetable oil until golden brown.

    For the caramel sauce:

    1 cup brown sugar

    1 tablespoon water

    1/4 teaspoon lemon juice

    1/2 cup heavy cream

    1 ounce sweet butter

    Combine sugar, water and lemon. Bring to boil, stirring constantly, and reduce to simmer for 5 minutes.

    Remove from heat. Add cream and butter (return to heat if it lumps up). Sauce should be served warm.

    Serves 8.
