Pasta: Macaroni and Cheese Lite

8 ounces dried macaroni
Water,salted (optional), boiling
2 tablespoons margarine, soft
2 tablespoons flour, all-purpose
Salt, to taste
1 cup milk, 1% lowfat
8 ounces cheddar cheese, lowfat
2 ounces bread crumbs
1/2 ounce margarine, soft
Recipe
1. Preheat oven to 400 degrees F. In a large pot, heat water to boil. Add pasta and cook until just tender (about 8 minutes). Drain and rinse pasta under cold water. Place in a large bowl and set aside.
2. Lightly grease a large baking dish.
3. Melt Butter. Stir in Flour and Salt. Cook 2 minutes, stirring, to eliminate floury tasts, then add Milk Gradually, stirring constantly with a whisk. Cook until thickened.
4. Add Cheese to Sauce. Stir until cheese melts.
5. Remove from heat and toss with pasta. Spoon into baking dish. Bake until lightly browned and bubbling (about 25 minutes).
