    Seafood: Zarzuela Catalana

    Recipe Introduction

    This is a dramatic and festive Spanish seafood dish with rich and spicy flavors.

    List of Ingredients

    4 tablespoons of olive oil
    4 cloves of fresh garlic, chopped
    1 medium onion, finely chopped
    3 medium ripe tomatoes, peeled, seeded and diced
    1/4 teaspoon of salt (optional)
    1/4 teaspoon of freshly ground black pepper
    2 bay leaves
    8 large shrimp, peeled and de-veined
    8 scallops
    1 lobster tail (about 4 ounces)
    8 clams
    8 mussels
    1 ounce of brandy
    2 teaspoons of Spanish paprika
    3 ounces of white wine

    Recipe

    1.Heat olive oil in skillet. Add the garlic and onion and saute over low heat. When the onion is transparent (clear), about 8 minutes, add tomatoes, salt, pepper and bay leaves, and bring to a boil. Cook for 2 minutes.

    2.Add the shrimp, scallops, lobster tail, clams, mussels and brandy. Flambe (tilt the pan away from you and carefully light the surface of the liquid with a match) to burn off the alcohol. Add paprika and white wine, cover and cook for 5 minutes.

    3.Remove lobster tail from shell and slice lengthwise into 4 pieces. To serve, remove bay leaves and divide lobster and seafood mixture among four plates.
