Tailgaiting Recipes & Super Bowl Party Tips

    Source of Recipe

    Joe Cahn
Joe Cahn is the Commissioner of Tailgating. The Commissioner's job is to promote tailgating, the Celebration in the Parking Lot. It's the new community social and the biggest weekly party in the nation! He's meeting the fans, the tailgaters and the folks on the road, in the rest stops, at the campgrounds, in the parking lots of America! He wants to make sure everyone is invited to the party. He's living the American dream. It's every sports fan's fantasy!

Here are some of Joe's favorite football party recipies:

    San Diego Fresh Salsa

4 cup chopped, peeled fresh tomatoes
    1/2 cup chopped onion
2 to 4 Jalapeno peppers, seeded and finely chopped
    1 tbsp. oil
    1 tbsp. vinegar
    2 garlic cloves minced
    1 tsp. cumin
    salt to taste
Combine all ingredients in bowl and mix well. Let stand for about two hours. Serve at room temperature. Store in refrigerator. Makes 3-4 cups.

    Grilled Chicken Salad Boats

4 packages of Perdue chicken tenders
Marinate in fat free zesty Italian dressing (1 large bottle)
2 bags of hot and crusty Pepperidge Farms hard rolls.
Cut the center out of each hard roll but don't go through the bottom. Make a boat out the rolls.
3 cups of celery chopped finely
1 medium onion chopped finely (I use a food processor)
    4 tablespoons of Duke's mayonnaise
    Salt and pepper to taste
Mix celery, onion and mayo together. Grill the chicken and then add to mixture - cut up chicken into fine pieces before adding to mixture and pepper to taste. Fill each roll and top with provolone cheese. Place rolls in a lightly buttered pan and place back on the grill. Melt cheese and brown the rolls. Serve hot with the grilled tomatoes and a glass of wine. Makes 18 rolls.

    Pretzel Dip

1 pkg. Hidden Valley dip Mix (original flavor)
    2 - 8oz. pkgs. cream cheese
    6 oz. beer
    6 oz. shredded cheddar cheese
    Pretzels
Mix all ingredients & chill. Happy dipping!

    Fruit Pizza

(A fruit pizza is made of a cookie dough crust, cream cheese filling and fruit toppings.)

    1/2 cup softened butter
    3/4 cup white sugar
    1 egg
    1 1/4 cups flour
    1 teaspoon cream of tartar
    1/2 teaspoon baking soda
    1/4 teaspoon salt
1 eight ounce package of cream cheese
    1/2 cup white sugar
    2 teaspoons vanilla extract
    Your favorite fruit topping
First, preheat your oven to 350 degrees. Then, mix in a large bowl until smooth the 1/2 cup softened butter and the 3/4 cup white sugar. Third, mix in the egg. Fourth, combine the above with 1 1/4 cups flour, 1 teaspoon cream of tartar, 1/2 teaspoon baking soda and 1/4 teaspoon salt. Blend all ingredients in bowl.

Now, press the dough you just made onto an ungreased pizza pan or cookie sheet in whatever shape or configuration you want. (We prefer footballs and goal posts.)

Bake in the preheated oven for 8 to 10 minutes or until light brown. Let crust cool after baking. (If you do not want to make your own crust, you can use premade sugar cookie cookie dough.) While crust is baking, in large bowl beat 1 eight ounce package of cream cheese, 1/2 cup white sugar and 2 teaspoons vanilla extract. Spread mix on the cooled crust.

Arrange your favorite fruit topping on top and chill until served. We are partial to strawberries, raspberries, pineapple, kiwi and blueberries. You can use whatever fruit you wish. Use the fruit to make pictures or spell sayings such as our "Go Colts" in blueberries.

JOE CAHN'S TIPS ON HOW TO THROW A "SAN DIEGO" STYLE SUPER BOWL PARTY
    1. DECORATE "SAN DIEGO" STYLE

Use large sombreros for chips, line the rim with containers of various dips.
Turn the heat way up and make your house nice and 'beachy."
Set up a wading pool in your living room so your guests can take a dip while watching the "Big Game" while pretending they are on the beach.
Put out beach chairs for extra seating

    2. "SAN DIEGO" STYLE PARTY FAVORS
When your guests come in, give them a pair of cheap sunglasses and some suntan lotion.

    3. FOOTBALL COSTUME CONTEST
Have all your guests wear their favorite team jersey

    4. SUPER BOWL PARTY FOOD
Don't forget to fire up the grill outside - don't worry about how cold it is...pretend you are in San Diego
See the recipes at the top of this page!

    5. ASSIGN A PARTY REFEREE
Have a person in a referee shirt to throw the yellow flag for the following offenses: Holding - Holding on to the popcorn too long; Party Foul - Double dipping anything; Illegal Use of Hands - self explanatory
