"Academy Awards" Crostini with Cheese

6 slices of day-old sour dough or Tuscan bread
6 slices of thinly sliced cheese (fontina, asiago, or cheddar)
Anchovy fillets
Strips of smoked salmon
Small cooked shrimp
Pesto
Recipe
1. Cut the bread into small shapes (stars, circles, ovals, etc.) using cookie cutters. Preheat the oven to 375 degrees.
2. Cut the cheese slices into shapes (stars, circles, ovals, etc.) using cookies cutters. Place on each piece of bread, cutting it to fit.
3. Cut the anchovy and salmon into small decorative shapes or strips. Place on anchovy, salmon, shrimp or pesto on top of the cheese. Grind a little fresh black pepper on each.
4. Spray a baking sheet with cooking spray. Place the crostini on the baking sheet and bake for 10 minutes, or until the cheese has melted. Serve immediately.
Serves 6 to crostini each.
