Lobster Cakes

4 ounces lobster meat, chopped
3 ounces Japanese Panko bread crumbs
3/4 cup mayonnaise
1 tablespoon Dijon mustard
2 teaspoons Old Bay seasoning
2 bunches parsley, chopped fine
Recipe
Combine all ingredients in a large mixing bowl. Make sure ingredients are distributed evenly throughout the mixture. Form 2-ounce patties from the mixture, pressing firmly so the patties will not flake.
In a saute pan or skillet, add oil and heat. Sear the patties on both sides and bake in the oven at 350 degrees. Remove from the oven when patties are golden brown and serve plain or with bearnaise sauce.
