Red Pepper Scallops and Pasta

List of Ingredients
12 oz. Fettuccine
4 tablespoons butter
1/4 cup olive oil
3 red bell peppers, slivered
2 cloves garlic minced
1/2 teaspoon dried red pepper
3/4 cup chicken broth
1/4 cup fresh lemon juice
1 pound medium scallops
1 cup sliced mushrooms (optional)
3/4 cup chopped parsley
salt and pepper

Recipe
Cook fettuccine, drain and set aside
Heat butter and oil in a skillet. Add bell peppers, garlic and pepper flakes.
Saute for one minute, remove peppers and set aside.
Add broth and lemon juice to skillet and bring just to a boil.
Add scallops and mushrooms, cover and simmer for five minutes, until scallops are opaque.
Remove from heat, remove scallops and set aside.
Toss fettuccine in skillet with broth and mushrooms to warm.
Place on serving dish. Top with bell peppers, scallops and parsley.
Serve with Parmesan cheese
