    List of Ingredients




    1 1/2 pounds scallops (cut large scallops in half)
    2 Tablespoons Vermouth
    2 Tablespoons minced parsley (or chives)
    1/4 Teaspoons dried thyme
    9 Inch pastry pie crust
    5 Eggs beaten
    1 Cup light cream
    1/4 to 1/2 of a medium red bell pepper, thinly julienned
    Paprika
    Salt and fresh pepper to taste

    Preheat oven to 450 degrees Fahrenheit.


    In a bowl, mix scallops, Vermouth, parsley (or chives), thyme, salt and pepper. Fill 9" quiche pastry with scallop mixture. In a separate bowl, mix cream and eggs then pour over scallop mixture.


    Arrange red bell pepper slices on top and sprinkle paprika. Bake for 10 minuets.

    Lower heat to 350 degrees and continue baking for 25-30 minutes until done.


    To check if quiche is done, insert a knife into center. If knife comes out clean, quiche is done.


    YIELD: 6 Servings
