    1 lb Mixed or Jumbo Scallops
    Ground black pepper to taste
    Paprika
    A bottle of Riunite Lambrusco, or other semi-dry red wine

    Recipe



    1. Cover the bottom of a glass casserole dish with a single layer of scallops.

    2. Pour wine over scallops. Wine should be as deep as scallops are thick.

    3. Mix a little pepper and paprika together, and sprinkle over the top.

    4. Bake at 350 til tops begin to turn light brown.


    SERVES 2-4
