Scallops in a Lime Ginger Sauce

List of Ingredients
12 ea. Scallops
1/4 cup Lime Juice
2 tbsp. Ginger
1/4 cup Onion, Finely Minced
4 ea. Lime Zest
1 cup Water
1/4 cup Sugar, Brown
1 tbsp. Parsley
2 tbsp. Chives
1/2 tbsp. Arrowroot or Cornstarch
Recipe
1. Combine the ginger, sugar, lime juice, lime zest, onion and water together.
2. Add the scallops to the marinade and marinate under 1/2 hour.
3. Remove the scallops from the marinade and pat dry. Season with salt and pepper.
4. Sear the scallops in a hot saute pan until golden brown on each side, the pan and oil should be very hot where the oil is starting to smoke slightly before you add the scallops to the pan.
5. Remove the scallops from the pan and add the marinade to the pan, heat to a simmer.
6. Dissolve the arrowroot in 2 Tbs. of cold water and add to the liquid, heat back to a simmer.
7. Add the herbs to the sauce and pour the sauce over the scallops.
