    A great Mediterranean dish that is easy to prepare yet tastes gourmet.

    List of Ingredients




    • 1 1/4 lb shrimp, peeled and deveined
    • 2 tbsp butter, with salt
    • 1 tbsp olive oil
    • 3 clove(s) garlic, minced
    • 1/2 tsp oregano
    • 3 tbsp parsley, chopped
    • 2 large tomato(es), seeded and chopped
    • 1/4 cup(s) dry white wine
    • 1/4 cup(s) chicken broth, low sodium
    • 1 cup(s) white rice
    • 4 oz feta cheese, crumbled

    Recipe



    1. Cook rice according to package directions (it should make about 2 and 1/2 cups cooked rice).
    2. Preheat oven to 375 degrees.
    3. Sprinkle shrimp with salt and pepper. In a large pot over medium-high heat, melt butter with oil.
    4. Add garlic and shrimp and saute until shrimp is pink, about 3-4 minutes.
    5. Add oregano, parsley, tomatoes, wine and stock and simmer 5 minutes.
    6. Add cooked rice and mix well.
    7. Transfer to a 2 1/2 quart casserole dish lightly coated with cooking spray. Sprinkle with feta cheese.
    8. Bake uncovered until heated through, about 25 minutes.


    SERVES 6
