10 c. water
4 1/2 c. sugar
1 c. cornstarch
2 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. salt
2 or 3 drops yellow food coloring
5 1/2 lb. apples, peeled, cored, and sliced
3 Tbsp. lemon juice
Recipe
In large saucepan, blend sugar, cornstarch, cinnamon, nutmeg, and salt. Stir in 10 cups water. Cook and stir until it comes to a boil and thickens. Add lemon juice and food coloring. Remove from heat. Fill hot jars to the neck with apples. Add hot thickened syrup to the neck. Add lids and process in hot water bath for 20 minutes.
Makes 7 quarts.
