    Frosting: Thick Butter Cream Frosting

    1/2 cup soft sweet butter
    1/3 cup cold Simple Syrup
    1/2 teaspoon vanilla
    pinch salt

    Recipe



    Measure butter into blender, and add syrup, vanilla and salt.
    Blend until smooth.
    Stop blender, and scrape sides once or twice.
    Use as filling and frosting or to decorate cakes that are not rich.
    Chill after spreading.
    Freezes well

    Yield: About 1 1/3 cup.

    Variation:
    Chocolate Butter Cream:
    Add 2 squares melted semisweet chocolate and 2 egg yolks to blender with syrup.

    Simple Syrup ---

    1 1/4 cups white sugar
    1/3 cup corn syrup
    2/3 cup water

    Put sugar, corn syrup and water into small saucepan.
    Bring to boil, and cover.
    Simmer 5 minutes; uncover, and simmer 4 minutes longer.
    Cool, pour into screw top jar and refrigerate.

    Yield: About 1 1/4 cups.
