Snacks: Candy Coated Peanuts

1 cup (200g) sugar
1 cup peanuts
1 cup (250ml) water
1 teaspoon vanilla essence
Recipe
Place all the ingredients in a saucepan.
Cook over a high heat until water begins to evaporate.
Lower the heat and stir constantly with a wooden spoon until water evaporates completely and peanuts are coated in a layer of slightly brown caramel.
Remove from heat and allow to cool a little.
Serve warm.
Approximate time of preparation:10-12 minutes.
