    6 Pounds Pork-Boston Butt.
    1 teaspoon Ground Thyme.
    1 teaspoon Granulated Garlic.
    1 teaspoon Paprika.
    1 teaspoon Cracked Black Pepper.
    1 teaspoon Ground Cumin.
    1 teaspoon Kosher Salt.
    1 teaspoon Pure Cane Sugar.
    1 teaspoon Ground Coriander.
    1 teaspoon Chili Powder.
    6 Chunks hardwood or fruitwood, soaked in hot water.

    Trim the butt leaving a one half inch fat cap on top. Mix all the spices and dry ingredients to form a rub. Apply the rub to all areas of the butt. Prepare the smoker for the indirect-method of cooking. Place the butt on the grid and cover, cooking at 225 degrees for six to seven hours until the butt is done. Let butt cool for 30 minutes and then place into a large mixing bowl and pull the meat using two forks, discard the bone. Mix in your favorite BBQ sauce(we use BarBeQue Man's Brand of Sauces)and toss until well mixed. Serve it on rolls or buns and remove to a platter....Top with a generous scoop of Cole Slaw.
