    August is Peaches Month!
    There are over 200 varieties of peaches sold commercially from California. California provides approximately 60% of peaches sold with South Carolina and Georgia providing 15% and 13%.

    One of the newer varieties of peaches is the California SUMMERWHITE® peach. It has a pale white skin with splashes of florescent pink, and the flesh is light pink or whitish in the interior.


    ---Helpful Tips---

    Inspecting peaches: When inspecting your peaches be sure to check to see if the color is yellow with no hint of green. Some red color on the fruit is normal and can vary with the variety of peach.

    How to ripen peaches: If the peaches are not fully ripened upon receiving, you can place the fruit in a paper bag and fold the top over loosely. Keep the bag at room temperature for 1-3 days. Never use a plastic bag as it may cause decay. Once the fruit is fully ripened, it can be store in the refrigerator for a week or more.

    How to peel peaches: Put them in boiling water for 10 seconds or until the skins split. Plunge them into ice water to cool and stop cooking. The skins will slip right off.

    How to prevent browning on the cut surface of fruit: Dip slices of fruit in a mixture of 1 cup water and 1 tablespoon lemon juice, or simply squeeze fresh lemon juice over cut surfaces.
